This Bourbon Peach Roasted Salmon is a sweet, savory, and slightly smoky seafood dish featuring tender roasted salmon glazed with a rich peach-bourbon sauce. The caramelized glaze pairs perfectly with flaky salmon for an easy yet elegant dinner ready in under 30 minutes.

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup peaches (fresh or frozen, diced)
  • ¼ cup bourbon
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon lemon juice
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley (chopped)
  • Extra peach slices (optional)
  • Lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place salmon fillets on baking sheet. Pat dry, then drizzle with olive oil. Season with salt and black pepper.
  3. In a saucepan over medium heat, combine peaches, bourbon, brown sugar, soy sauce, Dijon mustard, garlic, lemon juice, smoked paprika, and red pepper flakes.
  4. Simmer for 57 minutes, stirring occasionally. Lightly mash peaches to create a thick, chunky glaze.
  5. Spoon peach bourbon glaze generously over each salmon fillet, reserving some for later.
  6. Bake for 1215 minutes, or until salmon flakes easily with a fork.
  7. Optional: Broil for 12 minutes for a caramelized top.
  8. Drizzle with remaining glaze and garnish with parsley and extra peach slices. Serve with lemon wedges.
