- 1 cup peaches (fresh or frozen, diced)
- ¼ cup bourbon

- 1 teaspoon Dijon mustard
- 2 cloves garlic (minced)
- 1 teaspoon lemon juice
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley (chopped)
- Extra peach slices (optional)

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Place salmon fillets on baking sheet. Pat dry, then drizzle with olive oil. Season with salt and black pepper.
- In a saucepan over medium heat, combine peaches, bourbon, brown sugar, soy sauce, Dijon mustard, garlic, lemon juice, smoked paprika, and red pepper flakes.
- Simmer for 57 minutes, stirring occasionally. Lightly mash peaches to create a thick, chunky glaze.
- Spoon peach bourbon glaze generously over each salmon fillet, reserving some for later.
- Bake for 1215 minutes, or until salmon flakes easily with a fork.
- Optional: Broil for 12 minutes for a caramelized top.
- Drizzle with remaining glaze and garnish with parsley and extra peach slices. Serve with lemon wedges.
