Cheesy Mashed Potato Puffs

Description

Crispy on the outside, fluffy and cheesy on the inside, these mashed potato puffs are a delicious twist on classic mashed potatoes.

For the Crust:

  • 2 cups mashed potatoes (cold)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh chives (optional)
  • 1 tablespoon olive oil or melted butter (for greasing)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a muffin tin with olive oil or melted butter.
  2. In a large bowl, combine cold mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Fold in chopped chives if using.
  4. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 25-30 minutes, or until the puffs are golden brown and crispy on top.
  6. Let cool for 5 minutes before removing from the tin. Serve warm.

You can customize the seasonings to taste.
