For the Crust:
- 1 lb boneless, skinless chicken breast, sliced
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1/2 cup coconut milk
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1/4 cup chopped peanuts
- 2 green onions, sliced
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, garlic, and coconut milk to make the sauce.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-6 minutes.
- Add bell pepper to the skillet and cook for 2-3 minutes until slightly softened.
- Pour the peanut sauce over the chicken and peppers. Stir well and simmer for 3-4 minutes until the sauce thickens slightly.
- Garnish with chopped peanuts, green onions, and red pepper flakes if desired. Serve over rice or noodles.
