For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 1/2 cup coconut milk
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, garlic, and coconut milk to make the sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-6 minutes.
  3. Add bell pepper to the skillet and cook for 2-3 minutes until slightly softened.
  4. Pour the peanut sauce over the chicken and peppers. Stir well and simmer for 3-4 minutes until the sauce thickens slightly.
  5. Garnish with chopped peanuts, green onions, and red pepper flakes if desired. Serve over rice or noodles.

Notes

You can customize the seasonings to taste.
