- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 cup pitted cherries, chopped
- 1/2 cup pistachios, chopped
- Zest of 1 lemon
- Zest of 1 lime
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, beating after each addition.
- Mix in sour cream, lemon juice, lime juice, lemon zest, and lime zest.
- Fold in chopped cherries and pistachios.
- Pour the batter over the cooled crust and smooth the top.
- Bake for 55-60 minutes or until the center is set.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours before serving.
Notes
For the best flavor, use fresh fruits and nuts. Chill overnight for optimal texture.
