  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups stock
  • 2 bay leaves
  • 1 teaspoon Italian seasoning
  • Parmesan rind (optional)
  • Dry pasta, about 1 cup
  • 1/2 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh basil, chopped
  • Fresh parsley, chopped
  • Additional freshly grated Parmesan for serving

  7. Stir in the tomato paste. Toast for a minute.
  8. Add in the crushed tomatoes, stock, bay leaves, Italian seasoning and Parmesan rind (if you have one). Season with just a pinch of salt.
