- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- In the same pot, sauté garlic, pearl onions, and mushrooms until softened.
- Return beef to the pot, add apple cider, beef broth, thyme, salt, and pepper.
- Bring to a simmer, then add baby potatoes.
- Cover and braise for 2 hours until beef is tender.
- Serve hot.
