Description

A hearty, comforting stew featuring tender beef braised in apple cider with mushrooms, pearl onions, and baby potatoes, perfect for fall dinners.


Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 cups apple cider
  • 1 cup beef broth
  • 8 oz baby potatoes
  • 8 oz pearl onions, peeled
  • 8 oz mushrooms, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. In the same pot, sauté garlic, pearl onions, and mushrooms until softened.
  4. Return beef to the pot, add apple cider, beef broth, thyme, salt, and pepper.
  5. Bring to a simmer, then add baby potatoes.
  6. Cover and braise for 2 hours until beef is tender.
  7. Serve hot.

Notes

For best flavor, use fresh apple cider. This dish can be made ahead and reheated.
