For the Crust:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix ricotta, eggs, milk, lemon zest, lemon juice, and vanilla until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Heat a lightly greased griddle or skillet over medium heat.
- Pour 1/4 cup batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
